Healthy Milk Chocolate Truffles Dr. Michael Greger



HEALTHY MILK CHOCOLATE TRUFFLES ...
based on Dr. Michael Greger's Dark Chocolate Truffles recipe
from his HOW NOT TO DIE COOKBOOK

I have tweaked Dr. Michael Greger's Healthy Dark Chocolate Truffles recipe, and changed them to Milk Chocolate Truffles. Thank you Dr. Greger, I love your How not to die Cookbook. And would recommend people buy this book, as all proceeds go to Scientific Nutrition Research. It also comes as an E book and only costs £2.99. 

My friends love my Milk Chocolate Truffles - based on Dr. Greger's recipe - so I promised to make a video on how to make them. 


RECIPE

2 teacups of Cashew Nuts (unsalted - 2 x 150g bags) 
14 Medjool dates
12 tablespoons of almonds (200g bag)
1 teacup of Cocoa (1 packet of Organic Coco powder)

WASH YOUR HANDS

STEP 1 - SOAK CASHEW NUTS

Measure 2 teacups of unsalted Cashew Nuts and place in a bowl. Add boiling hot water (distilled water if possible). Cover with a plate.

Soak Cashew Nuts for 3-4 hours. I usually drain the Cashew Nuts after 3 hours, and place in the fridge overnight. 



STEP 2 - GRID/BLEND ALMONDS

Measure 14 tablespoons of Almonds, and place in a blender (grinder).  Grind into a fine Almond Powder. Place the dried ingredients into a bowl.

Now place the remaining Almonds from the 200g bag, into the blender. Grid into a fine powder.
Place in a separate container. 



STEP 3 - COCOA

1 cup of Cocoa fine powder (organic if possible). Place in the bowl with the Almond powder. And mix well.




STEP 4 - SOAK MEDJOOL DATES

Add 14 Medjool Dates to a bowl. Pour on boiling hot water (distilled if possible). Allow to soften for at least 10 minutes. 

Sieve the Medjool Dates and drain the water. Cut the Dates open to remove the pips and place them in the blender. Blend until you achieve a smooth paste. 



STEP 5 - BLEND CASHEW NUTS

Place the Cashew Nuts into the blender and keep blending until you have a smooth creamy paste. Add the Cashew Nut paste to the Almond and Cocoa powder. 



STEP 6 - NOW TO GET YOUR HANDS DIRTY

Wash your hands, and dry well. 

Similar technique as bread kneading. Keep kneading the mixture until you form a big ball. 

Make small to medium sized balls and place in a container.

Now roll the small balls in the ground up almond powder. 

Place the Milk Chocolate Truffles into a container, and store in the fridge. We tend to eat our Truffles within 4-5 days. I personally, would not store them in the fridge for longer. But do your research!



Sadly, my video on how to make Healthy Milk Chocolate Truffles did not turn out very well. I will have to try again!

The video did not record the whole process. Typical. But then it is a cheap camcorder. Never mind I will have to try again when the boat comes in and I have a better camcorder.
